Potato and Herb Bread

Potato Bread
I love my bread making machine but I only use it for mixing and rising, as cooking it in the oven enables me to create the size, shape and in the case of this bread, give it a nice crispy crust.
So here’s what you’ll need.
1 and 3/4 cups of warm water
1 T/spoon sugar
1 and 1/2 t/spoons salt
1 T/spoon of herbs (oregano, basil, thyme, parsley) chopped finely
1 clove of crushed garlic
1 cup of instant potato flakes
3 T/spoons lecithin
1 cup wholemeal flour
2 cups plain flour
3 t/spoons bread making yeast (Surebake yeast)

Chuck it all in the bread maker turn it to dough and wait.

Lightly oil a flat tray and turn out the dough. Wet your hands in cold water and shape the bread. Use a tea strainer to sprinkle a light coating of flour and cut 3 slices diagonally on top of bread.

Bake at 225 degrees for about 25 minutes. Bon apetit.
